Ingredients (12)

1 garlic — cloves, crushed
15 ml dried oregano
1 green chillies — deseeded and finely chopped
2 ml cumin — ground
1 onion — small, chopped
2 spring onions — include green ends, trimmed and finely chopped
45 ml red wine vinegar — or sherry vinegar
45 ml lemon juice
2 ml dried red chilli flakes
sea salt and freshly ground black pepper
1 flat-leaf parsley
125 ml olive oil — extra virgin

Method:

1. Combine all the ingredients except the parsley and olive oil and mix thoroughly.

2. Finely chop the fresh parsley.

3. Whisk the oil into the other ingredients until combined then stir in the parsley.

4. Leave to rest for at least 2 hours if possible before serving at room temperature with meat, fish or veggies.
