Chimichurri

Chimichurri is a classic Argentinian salsa enjoyed with grilled meat. It can be used as a meat marinade and is delicious with everything from a simple avocado and tomato salad to crayfish.

Ingredients (12)

1 garlic clove — crushed
15 ml dried oregano
1 green chilli — finely chopped
2 ml ground cumin — ground
1 onion — small, chopped
2 spring onions — finely chopped
45 ml red wine vinegar — or sherry vinegar
45 ml lemon juice
2 ml dried red chilli flakes
sea salt and freshly ground black pepper — to seaon
1 handful flat-leaf parsley
125 ml extra virgin olive oil

Method:

Combine all the ingredients except the parsley and olive oil and mix thoroughly.

Finely chop the fresh parsley.

Whisk the oil into the other ingredients until combined then stir in the parsley.

Leave to rest for at least 2 hours if possible before serving at room temperature with meat, fish or veggies.
