|fresh coriander sambal and limes — finely chopped, to garnish|
In a large saucepan, heat the oil and buttermon medium heat. Add the onion and sautémfor 2-3 minutes.
Add the garlic, ginger and curry powder. Fry till fragrant, 2-3 minutes, ensuring it doesn’t burn.
Add the chicken and toss to coat. Add the tomato paste and water, and cook till the chicken is just done, 10-15 minutes. Season with salt and pepper.
Stir in the cream and simmer for 10 minutes.
Garnish with chopped coriander.
