Ingredients (15)

500 ml rice
salt
30 ml oil
2 onion — chopped
3 garlic — cloves
2 ml fresh ginger — grated
4 chicken breast fillets — sliced into strips
5 ml chillies — powder
2 ml cumin — seeds
2 ml coriander — seeds
2 ml cinnamon — ground
2 ml cardamom — ground
2 ml turmeric
raisins — handful
fresh coriander — handful, chopped

Method:

1 Cook the rice in boiling salted water until done.

2 Heat the oil in a pan, add the onions, garlic and ginger and fry for 2 minutes.

3 Add the chicken and cook for 5 minutes.

4 Add the spices and cook for another 2 minutes.

5 Add the raisins and cooked rice, cover and set aside to steam for 15 minutes.

6 Just before serving add the chopped coriander.
