Ingredients (6)

1/2 cup water — hot
2 Tbs sugar — or honey or xylitol
2 star anise
1 cinnamon — stick
1 grapefruit — large,zest and juice
1 wine — sparkling wine

Add all ingredients except the bubbly to a small pot, bring to a simmer and then allow to reduce by half or until slightly syrupy (will take 10-15 minutes).

Remove from the heat, allow to cool, strain and divide between 4 champagne glasses, top with your chilled champagne and serve immediately.
