Toss turkey in oil.
Heat a large frying pan, add turkey and stir-fry for two minutes.
Remove from pan and turn down heat.
Add onion and garlic to pan and stir-fry for five minutes, then add turkey, soya sauce and sugar.
Cook for a few minutes, then add fish sauce and simmer.
To serve, layer avocado, mango, cucumber, beetroot and rocket on one side of each roti and top with turkey.
Fold over and eat right away.
Alternatively, you could serve the turkey with fragrant rice and steamed greens.
