Cajun-crumbed fish burgers

Ingredients (9)

4 hake fillets — frozen
50 ml flour
Cajun spice
1 eggs — lightly beaten
breadcrumbs — ciabatta
45 ml butter — and sunflower oil
4 bread — rolls or baguette
50 ml mayonnaise
- chopped and fried — SEPARATE ENTRIES

Pat the fillets dry with paper towels. Mix the Cajun spice into the flour thoroughly. Coat the fish in the flour mixture, then coat it in egg and then in breadcrumbs.

Heat the butter and oil in a frying pan over medium heat. Fry the fish until cooked through and the crumbs are golden brown.

Cut the rolls open and spread with mayonnaise. Top with a fish fillet, some rocket and tomato slices.
