Broccoli and courgette frittata

Ingredients (6)

30 ml butter
1 onion — chopped
8 courgettes — sliced
500 ml broccoli — cut into small florets
6 eggs
250 ml grated mature cheddar

Oven temperature: grill

Melt the butter in an ovenproof frying pan and sauté the onion until soft. Add the courgettes and broccoli and sauté until almost cooked. Remove from the pan and set aside.
Whisk the eggs lightly and add salt and freshly ground black pepper. Pour into the frying pan and fry over medium to low heat for a minute, so that the bottom sets.

Add the vegetables and fry for a few more minutes, until the edges start to set. Sprinkle the cheese over and place under a hot grill. Cook for another 3-4 minutes, or until the centre of the frittata has set. Slice into wedges and serve with salad.
