4 aubergine — sliced
2 garlic — cloves
1 lemon — zest
45 ml fresh chillies — 573
10 ml tahini paste
125 ml fresh parsley — chopped
60 ml fresh mint — chopped
60 ml yoghurt — Greek
10 ml honey salt and freshly ground black pepper

Method:

Serve with toasted pita bread.

1. Steam the brinjal slices in a colander over a saucepan with boiling water for 5 minutes or in the microwave oven in a steamer until just soft. Set aside to cool.

2. Blitz the brinjals and remaining ingredients in a food processor until smooth.

3. Season with salt and pepper and serve with toasted pitta bread.
