Beetroot salad with lime and halloumi

Raw beetroot is highly nutritious so this salad isn’t only delicious, it’s really good for you too.

|beetroots — peeled|
|baby red cabbage|
|spring onions — chopped|
|30 g||watercress — or spinach|
|30 ml||fresh chillies — 573|
|salt and freshly ground black pepper|
|150 g||haloumi cheese|

1 Thinly slice or julienne the beetroot and transfer to a mixing bowl.
2 Shred the red cabbage and slice the red onion. Add both to the beetroots.
3 Core the apple and thinly slice or julienne, then add to the beetroot mixture. Add the rest of the ingredients to the salad and toss lightly.
Mix all the ingredients well and pour over the salad. Mix through lightly. Arrange the salad on a serving platter.
Cube the haloumi. Heat the butter in a pan and fry the cheese until golden brown. Sprinkle the cheese over the salad and serve immediately
