Ingredients (11)

frikkadels — Eskort BBQ
100 g beetroot — roasted
1 red onion — thinly sliced
wild rocket — handful
1 avocado — thinly sliced
1/4 cup yoghurt
1 tsp white vinegar
1 garlic clove — chopped
4 pita bread — low GI
3 tbsp avocado oil
salt and freshly grounded black pepper - to taste

Preheat the oven to 180°C.

Place the frikkadels, still in their bag, in the microwave for 2 minutes.

Remove from the bag and place the frikkadels onto a lined baking tray. Bake in the oven for 10 minutes.

Add the beetroot, red onion, vinegar and garlic to a mixing bowl and season with salt and pepper.

Dress the avo with the vinegar and season with salt and pepper.

Toast the pita breads with the avo oil in a frying pan for 30 seconds on each side or keep them untoasted.

Remove the frikkadels from the oven.

Fill the pitas with 1 tablespoon of yoghurt, add the rocket and some of the red salad.

Add the BBQ frikkadels and avo and serve.
