Preheat the oven to 180ºC. Allow one sheep’s head per person. After shaving the heads, rinse them well under running water (also rinse the mouth). Season the heads with salt and freshly ground black pepper and place in an oven pan with about half a cup of water. Cover with aluminium foil and bake the heads for at least 4 hours. Remove the foil and bake the heads for another hour or until crisp. Serve hot, lukewarm or even cold.
