Ingredients (13)

courgettes — grated or cut into noodles
410 g canned whole-kernel sweetcorn — drained
red onion — chopped
125 ml cheddar cheese — grated
chilli — chopped
fresh parsley — chopped
125 ml flour
2,5 ml salt
5 ml freshly ground pepper
oil — for shallow frying

Mix all the ingredients, except the oil, well.

2 Heat a little oil in a non-stick pan and add spoonfuls of the fritter mixture. Lightly flatten and fry over medium heat until golden brown. Turn carefully and fry the other side until golden brown. Drain on paper towels.

3 Repeat with the rest of the mixture.


Serve as a side dish or snack. Or serve with baby marrow noodles and/or sour cream as a main dish.
