A fresh and filling salad that is perfect for the summer table.

Moisten the avocados and apples with lemon water made with the lemon juice to prevent discoloration.
Use four large individual salad plates or soup bowls in which to assemble the salad.
Place a generous quantity of rocket leaves in each dish, arrange the avocado and apple slices and orange segments on top and sprinkle with the walnuts.
Season with salt and pepper.
Blend the ingredients for the dressing and drizzle on top.
– Make sure to serve quite soon after preparatin as the apples will eventually start to colour.
– Pan-fy some chicken breasts in some olive oil and season well. Slice and place on top of your salad with another splash of dressing.
– Fillets of fresh fish will aslo work here.
