A fresh and tasty variation on an old favourite.
|2||apples — cored and cut into wedges|
|1||pear — cored and cut into wedges|
|45 ml||sugar or sweetener such as low-gi fructose|
|250 ml||sultanas juice and grated zest of 1 lemon|
|1||creamed cottage cheese|
|80 ml||icing sugar or sweetener such as low-gi fructose|
|500 ml||rolled oats — toasted|
|125 ml||sugar or sweetener such as low-gi fructose|
|5 ml||cinnamon — ground|
|to serve — to serve|
|whipped cream, ice cream or custard|
the oven to 180°C. Grease a medium tart tin well with nonstick spray.
1. Filling: Mix the apples, pears,
sugar or sweetener, sultanas and lemon juice.
2. Mix the
lemon zest with the cottage cheese, thenmix in the icing sugar or sweetener.
3. Add the
apple mixture to the cottage cheese mixture and combine well. Transfer to the ovenproof
topping: Mix the oats, sugar or sweetener and cinnamon, then rub in the butter
with your fingertips. Sprinkle over the apple mixture.
5. Bake for
about 45 minutes or until the fruit is soft and the topping has turned golden
6. To serve: Top with whipped cream,
ice cream or custard.
