Apple and granola crumble

A winter dessert at its best – warm, juicy chunks of apple with a crunchy, nutty topping. This recipe is so easy, it should definitely become part of your repertoire. The apples cook with the crumble in the oven and retain their shape and delicious flavour. Recipe by Heleen Meyer

Ingredients (11)

250 ml oats
125 ml cake flour
50 g almonds — raw, finely chopped
75 ml soft brown sugar
2.5 ml mixed spice — ground
100 ml butter
2-3 apples — cut into small chunks
15 ml lemon juice
30 ml Goldcrest Pure Honey
250 ml rooibos tea — strong
Greek yoghurt — seasoned with grated lemon rind to serve

Method:

Preheat the oven to 180 °C.

Place oats, flour, almonds, sugar and mixed spice in a mixing bowl. Rub in the butter with your fingertips until it resembles coarse breadcrumbs. Or blend in a food processor.

Divide apples between 6 individual ovenproof dishes. Drizzle lemon juice, honey and tea over and crumble the granola mixture over the apples.

Place individual dishes on a baking tray and bake for 20-25 minutes or until golden brown and cooked.

Serve hot apple crumble with dollops of seasoned yoghurt.

Tip

Any berry- or chai-flavoured Rooibos tea will be delicious to use in this dessert.
