3-minute microwave pesto fish
|200 g||fish — white, filleted|
|1 tbsp||pesto — red|
|50 g||courgettes — sliced|
|6||cherry tomatoes — halved|
|1||butter — knob|
Lay a large piece of baking paper onto a plate.
Place the veg in the centre and top with fish, pesto, butter and tomatoes.
Season with salt and pepper.
Fold over the edges of the paper to form a sealed rectangle.
Steam in the microwave on full power for 2 ½ – 3 minutes. (I used a 1000W microwave oven – be careful when opening the parcels and they will be filled with hot steam.)
