Spicy beef, caramelised apricot and feta pizza

    olive oil

    onion, sliced

    beef strips
  • 15
    Mexican spice
  • 50
    apricot jam
  • 250
    Turkish apricots
  • 4
    rounds feta cheese
  • 8
    mini pizza bases


Preheat oven to 200°C.

Heat the oil in a frying pan. Add the onion and sauté until it is translucent. Add the beef strips and the Mexican spice and sauté on a high heat until the meat is just browned.

Heat the jam in a small saucepan until melted. Add the apricots and toss in the pan so they are well coated with the apricot jam.

Arrange the beef strips, caramelised apricots and feta cheese on top of the pizza bases. Place the pizzas onto a greased baking tray and bake in a preheated oven for 15 minutes. Serve with a side salad.
