Seared fresh tuna nicoise

    fresh tuna steaks
  • olive oil
  • 16
    cherry tomatoes
  • 100
    green beans, blanched
  • 12
    new potatoes, cooked and sliced
  • 2
    soft-;boiled eggs, shelled and quartered

    black olives
  • 1
    small red pepper
  • 1
    clove garlic
  • 50
    red wine vinegar
  • 1
    lemon, grated rind and juice
  • few basil leaves
  • 100
    olive oil

Brush tuna steaks with olive oil and sear on a hot griddle pan for 1-2 minutes. Turn and grill for another 1-2 minutes. Tuna should be pink inside. Assemble a pile of salad ingredients on each plate. Season. Top with a tuna steak. SAUCE: Char-grill or roast pepper and garlic. Peel. Process together with vinegar, lemon rind and juice and basil leaves. Slowly add oil with motor running. Pour over tuna salad.
