Peanut butter crunchies

    golden syrup
  • 60
    soft brown sugar
  • pinch salt
  • 250
    peanut butter
  • 5
    vanilla essence -
  • 750
    Rice Crispies
  • 200
    dark chocolate (optional)


Spray a 23 x 23 cm baking tray with non-stick spray. In a heavy-bottomed saucepan, mix the golden syrup, soft brown sugar and salt together and heat slowly. Stir continuously till the sugar has dissolved. Bring to the boil and add the peanut butter. Mix well. Remove from the heat and add the vanilla essence. Stir in the Rice Crispies and mix. Press the mixture into the prepared baking tray. Melt the chocolate on 100 per cent power in the microwave oven for 1-2 minutes. Stir continuously. Spread the chocolate over the mixture in the baking tray and chill till firm. Remove from the fridge and leave till the mixture reaches room temperature. Cut into squares. Makes about 30 squares.
