Greek salad

  • 1
    English cucumber
  • 4
    ripe tomatoes - cut into large chunks
  • 2
    red onion - sliced as thinly as you can
  • Kalamata olives
  • Feta cheese - cut into chunks
  • Dressing (for a large salad):
  • 1/2
    olive oil
  • 1/2
    lemon juice
  • 1 1/2
  • 1
    dried oregano


First, take a fork and scrape it along the length of the cucumber.

This allows the dressing to be slurped up by the cucumber.

Then slice the cucumber in half length ways and remove the seeds.

Slice the cucumber into thick chunks. Place into a large bowl.

Add all the other salad ingredients to the bowl.

Combine the dressing ingredients and mix well.

Pour over the salad and allow to ‘marinate’ for at least 20 minutes but up to 2 hours.
