Ingredients (10)

500.00 g sugar
1.00 Litres water
1.00 lemon
1.00 orange
4.00 cm fresh ginger — peeled and grated
vinegar — berry, to taste
FRUIT
1.00 watermelon — small
1.00 melon — winter
1.00 melon — sweet, spanspek
fresh mint — chopped

Method:

Stir the sugar and water over low heat until the sugar has dissolved. Add the remaining ingredients except the vinegar and boil rapidly until syrupy, about an hour. Cool and remove the lemon and orange. Add berry vinegar to taste.

Use a ball spoon to scoop out round balls from each of the melons (equal quantities of each). Place the fruit balls in the cooled syrup, add the mint leaves and mix. Chill for one to two hours before serving. Serve with gammon in ginger ale (see recipe) or as a dessert with whipped cream or ice cream.
