Bacon and goat's cheese pizza

    circles of Basic pizza dough
  • 15
    olive oil
  • 3
    cloves garlic, thinly sliced
  • 8
    slices lean bacon, chopped
  • 200
    mushrooms, sliced
  • 125
    tomato puree
  • 250
    mozzarella cheese, grated
  • 100
    crumbled goat's cheese
  • 4
    spring onions, chopped on the slant
  • 65
    each of basil and Italian parsley
  • salt and milled pepper


about 25 minutes
Preheat oven to 240 °C.
Heat olive oil in a pan and fry bacon for five minutes until crisp.
Add garlic and mushrooms and cook for a further five minutes.
Roll out dough into four thin circles half a centimetre thick and lay on a floured baking tray or tile.
Rub with olive oil and parbake for three to four minutes.
Remove and spread on tomato purée.
Add spring onions and herbs to mushroom mixture, scatter over pizza and add cheese.
Bake for eight to ten minutes or until golden.
Cook's note: Use lean bacon or ostrich bacon to keep kilojoules down and flavour up.
