Ingredients (11)

4.00 pizza base dough
15.00 ml fresh chillies — 573
3.00 garlic — cloves, thinly sliced
8.00 bacon — lean slices, chopped
200.00 g mushrooms — sliced
125.00 ml tomato purée
250.00 g mozzarella cheese — grated
100.00 g goat's milk cheese — crumbled
4.00 spring onions — chopped
65.00 ml fresh mixed herbs — parsley and basil
0.00 salt and freshly ground black pepper

Preheat oven to 240 °C.
Heat olive oil in a pan and fry bacon for five minutes until crisp.
Add garlic and mushrooms and cook for a further five minutes.
Roll out dough into four thin circles half a centimetre thick and lay on a floured baking tray or tile.
Rub with olive oil and parbake for three to four minutes.
Remove and spread on tomato purée.
Add spring onions and herbs to mushroom mixture, scatter over pizza and add cheese.
Bake for eight to ten minutes or until golden.
Cook’s note: Use lean bacon or ostrich bacon to keep kilojoules down and flavour up.
