Add a little curry kick to your hamburgers for a departure from the ordinary.
1. Put the mince, curry paste and coriander in a bowl, season with salt and pepper, then mix well with your hands. With wet hands, shape into 4 burger patties.
2. Preheat a pan over medium-high heat. Brush the burger patties with oil and cook, turning once, for 15 minutes or until done.
3. Tomato relish: Heat the oil in a pan over medium high and fry the cherry tomatoes and onion for 5 minutes. Add the chillies, vinegar and caster sugar and cook for 15 minutes or until slightly thickened. Stir in the coriander and set aside.
4. To serve: Top the bottom halves of the buns with rocket, onion, rocket and the patties. Cover with the top halves of the buns and serve with the tomato relish and coleslaw.
