Asparagus in parma ham with yoghurt dip

Ingredients

  • 10-12
    asparagus
  • 30
    ml
    olive oil salt and freshly ground pepper
  • 4
    slices Parma or Black Forest ham
  • DIP
  • 125
    ml
    full-cream plain yoghurt juice and grated zest of 1 lemon
  • 1
    chilli, chopped
  • 60
    ml
    mixed fresh herbs (such as mint, coriander and parsley), chopped
  • 1
    garlic clove, crushed
  • 30
    ml
    olive oil salt and freshly ground pepper
  • TO SERVE
  • extra fresh herbs (optional)
 

Method

10 minutes
 

1. Snip the hard tips off the asparagus stalks and put the rest of the stalks in a bowl. Cover with boiling water and let them stand for 10 minutes. Drain and allow to cool.

2. Drizzle the olive oil over the asparagus and season with salt and freshly ground pepper.

3. Wrap slice of ham around 2-3 asparagus stalks. Repeat until you’ve used all the asparagus and ham.

4. Dip Mix all the ingredients well and season with salt and freshly ground pepper.

5. Serve the ham-wrapped asparagus stalks with the dip and extra fresh herbs, if using.
