Gooey chocolate pudding

    caster sugar, divided

    flour
  • 80
    ml
    cocoa, divided
  • 10

    baking powder
  • pinch of salt

    milk
  • 80
    ml
    butter, melted
  • 10
    ml
    vanilla essence
  • 200
    g
    dark chocolate, finely chopped
  • 250
    ml
    hot water
  • 15
    ml
    instant coffee ice cream, to serve
 

Method

Preheat oven to 180 °C.

 1 In a medium bowl, mix together 200 ml (3⁄4 cup) caster sugar, the flour, 45 ml (3 tbsp) cocoa, baking powder and salt. Whisk in the milk, butter and vanilla. Beat until smooth.

 2 Spread this batter in a greased baking pan. Sprinkle with chocolate.

 3 In another medium bowl, stir together the remaining caster sugar, cocoa and brown sugar. Sprinkle this mixture over the batter.

 4 Mix the hot water with the coffee and carefully pour the mixture over the batter. Do not stir.

 5 Bake for 40 minutes. Spoon the pudding and sauce into bowls and top immediately with ice cream to serve. Enjoy!
