Place 250 g dried green peas in a large microwaveproof bowl with 1 litre cold water. Cover and cook on high for 5 minutes or until boiling.
Allow to stand for 1 hour before using. (Lentils: 4 minutes, kidney and haricot beans: 6 minutes, chickpeas: 9 minutes.)
