Garlic mushrooms with avocado and basil

Ingredients (7)

12 brown mushrooms — wiped
60 ml olive oil
4 garlic cloves — crushed
15 ml dried oregano salt and freshly ground pepper
salt and freshly grounded black pepper - to taste
125 ml avocado — to serve
10 g fresh basil

Method:

Put the mushrooms in a marinating dish. Cover with the olive oil. Add the garlic and oregano. Season generously with salt and freshly ground pepper.

Heat a large pan and fry the mushrooms in batches until slightly golden but still firm.

Remove from the pan and set aside to cool completely.

To serve Arrange the mushrooms on a platter and spoon a dollop of avo dip on top of each. Sprinkle the crushed dried chillies over (if using) and top off with fresh basil.
