The water should cover the eggs completely so that they cook evenly. If the eggs are for garnishing, stir them while they are cooking to place the yolks in the centre.
SOFT-BOILED
A rough guide is a minimum of 3 1/2 minutes to a maximum of 5 1/2 minutes.
HARD-BOILED
10-12 minutes. Remove from water with a slotted spoon and rinse under cold water as soon as time has elapsed. Crack the shell to arrest cooking.
