Coffee and goji berry granola

Ingredients (11)

2 cup oats — rolled
1 cup macadamia nuts
1/2 cup walnuts
1 1/2 cup pecan nuts
1/2 cup sunflower oil
3 instant coffee powder
3 brown sugar
1/4 cup coconut oil — melted
1/2 cup honey
1/3 cup chocolate — chips
1/3 cup goji berries

Method:

Pre heat the oven to 180°C. Line a large baking tray with some baking paper.

Stir the oats, macadamia nuts, walnuts, pecan nuts, sunflower seeds, coffee, sugar, cocoa and vanilla together in a large mixing bowl.

Whisk the oil and honey together. Pour it over the dry ingredients and stir to coat it all evenly.

Turn it out onto the lined baking tray and spread it out to form an even layer.

Bake for 25 minutes. Once it comes out of the oven stir the chocolate chips and goji berries through the granola. Allow it to cool on the tray. Break up any big chunks and store in an airtight container.

Serve it with added honey, if you prefer, on some creamy Greek yoghurt or with some milk. It also makes for a yummy snack and adds a lovely crunch to smoothies. You can also enjoy it as a topping on ice cream.

Tips:

You can heat the honey up in the microwave for 10 seconds if it makes combining it with the oil a bit easier.

Always add your chocolate, dried berries and fruit at the end, as it will over cook in the oven and burn.

You can replace the coconut oil with olive oil or sunflower oil.
