Pre heat the oven to 180°C. Line a large baking tray with some baking paper.Stir the oats, macadamia nuts, walnuts, pecan nuts, sunflower seeds, coffee, sugar, cocoa and vanilla together in a large mixing bowl.Whisk the oil and honey together. Pour it over the dry ingredients and stir to coat it all evenly.Turn it out onto the lined baking tray and spread it out to form an even layer.Bake for 25 minutes. Once it comes out of the oven stir the chocolate chips and goji berries through the granola. Allow it to cool on the tray. Break up any big chunks and store in an airtight container.Serve it with added honey, if you prefer, on some creamy Greek yoghurt or with some milk. It also makes for a yummy snack and adds a lovely crunch to smoothies.
