Stir-fried chicken with pasta

    ml
    sunflower oil
  • 800
    g
    chicken fillets, sliced in strips
  • 250
    g
    mushrooms, cleaned and sliced
  • 125
    g
    baby corn
  • 125
    g
    mange tout
  • 1
    yellow pepper, cubed
  • 8
    peppadews, sliced
  • handful
    fresh basil
  • Salt and fresh ground black pepper
  • 500
    g
    spaghetti, cooked according to packet instructions
  • 125
    g
    basil pesto
  • 150
    g
    feta, cubed
  • 50
    g
    pitted olives
 

Method

25 mins
 
Heat the oil in a heavy based pot, and stir fry the chicken until cooked.

Add the mushrooms, baby corn, mange tout, yellow pepper and peppadews. Stir fry for 5 to 7 minutes.

Add the fresh basil and season with salt and pepper.

Mix the basil pesto into the spaghetti, whilst still hot.

Add the stir fried chicken and vegetables.

Top with the feta and olives. Serve hot.
