Olive and salami salad

  • PER SERVING:
  • 4 or 5 slices salami
  • 4 or 5 cos lettuce leaves
  • 5 or 6 slim ribbons of cucumber
  • 5 or 6 baby tomatoes, halved or quartered depending on their size
  • 1
    Tbs
    rosemary needles, finely chopped and toasted lightly in a dry pan
  • 1
    Tbs
    avocado oil mixed with 1 tsp lemon juice
  • 5 or 6 marinated olives
  • aalt and pepper to taste
 

Method

 

Add toasted rosemary needles to the avocado oil and lemon juice, season to taste with salt and pepper, and toss the tomatoes, cucumber ribbons and cos lettuce leaves in this.

Arrange salami slices and lettuce decoratively on a plate and soon on the cucumber, tomatoes and marinated olives. Drizzle any remaining dressing over. You can add a little crumbled feta if you like.
