Easy microwaved buttermilk pudding with caramel sauce

    extra-large eggs
  • 140

    self-raising flour

    ml
    salt
  • 250
    ml
    milk
  • 500
    ml
    buttermilk
  • CARAMEL SAUCE
  • 138

    cream caramel sweets
  • 125
    ml
    milk
  • 5
    ml
    vanilla essence
 

Method

17 min + 10 min stan
 
Spray a 22 cm glass bowl with non-stick spray. Beat the butter and sugar together until light and creamy. Add the eggs one by one, beating well after each addition. Sift the self-raising flour and salt together and blend the milk and buttermilk. Fold the dry ingredients into the butter mixture, alternating with the milk mixture. Turn into the prepared bowl. Place the bowl on an upturned saucer in the microwave oven and microwave for 15 minutes on medium or 50 per cent power. Leave the pudding for 10 minutes to become firm. Serve with caramel sauce. Place all the ingredients for the sauce in a microwaveproof bowl and microwave for 2 minutes on 100 per cent power. Stir well. Serve with the buttermilk pudding. Serves 6.
