Cream of lettuce and pea soup

Ingredients

    g
    butter
  • 1
    iceberg lettuce, washed and sliced into strips (keep a little to garnish)
  • 500
    g
    frozen petit pois peas (keep a few to garnish)
  • 10
    ml
    salt
  • 5
    ml
    sugar
  • 1
    Litres
    boiling water
  • fresh mint leaves
 

Method

Melt butter in a large saucepan. Add lettuce, peas, salt and sugar. Toss together and cook, covered, for 5 minutes. Add water and mint leaves, keeping some to garnish. Cook for a further 5 minutes until peas are quite tender. Purée in a blender or pass through a sieve. Return to pan to reheat. If you're serving the soup cold, chill in fridge when cool. Garnish with shredded lettuce, peas and mint leaves. Serves 4-6.
