Ingredients (7)

125.00 g butter
1.00 lettuce — iceberg, sliced
500.00 g peas — frozen
10.00 ml salt
5.00 ml sugar
1.00 Litres water — boiled
fresh mint

Method:

Melt butter in a large saucepan. Add lettuce, peas, salt and sugar. Toss together and cook, covered, for 5 minutes. Add water and mint leaves, keeping some to garnish. Cook for a further 5 minutes until peas are quite tender. Purée in a blender or pass through a sieve. Return to pan to reheat. If you’re serving the soup cold, chill in fridge when cool. Garnish with shredded lettuce, peas and mint leaves. Serves 4-6.
