Ingredients (21)

1 large potatoes — boiled and mashed
20 g butter
10 ml ground cinnamon
15 ml aniseed — ground
10 ml ginger — ground
6 ml ground
cardamom
5 ml salt
7 ml naartjie — finely grated
peel
375 ml water — warm
20 ml sugar
1 eggs
5x250 ml flour — cake
5 ml Baking powder
10 g Superbake Instant Yeast
60 ml oil
oil — for deep frying
icing sugar — for dusting
SYRUP
250 ml white sugar
200 ml water

Method:

A delicious twist on a traditional treat!

1. Mash the potato and butter. Add the spices, salt, naartjie peel, water, sugar and egg.Mix well. Add flour, baking powder and yeast. Mix well.

2. Add oil a little at a time,mix well and knead until the dough no longer sticks to your hands. Cover and leave to stand for about 30 minutes in a warm place.

3. Grease a baking tray with margarine or butter. Punch down the dough, break off 10 g pieces and shape into balls or make plaits. Cover and leave in a warm place until double in volume.

4. SYRUP: Boil ingredients until a light syrup forms. Remove from the heat.

5. Heat the oil until hot. Fry a few koeksisters at a time until golden brown and cooked. Remove with a slotted spoon and plunge into hot syrup immediately.

6. Remove from the syrup and leave to cool on a wire rack. Dust with icing sugar.
