Oven-roasted lamb loin

  • 700
    trimmed Karoo lamb loin
  • a few sprigs of fresh rosemary
  • a few sprigs of fresh thyme
  • 2
    cloves garlic
  • salt and pepper to taste


Preheat oven to 180°C.  Meanwhile on a very high heat, sear the piece of lamb in a large pan, to seal in the juices.

Remove lamb loin from pan. Add rosemary, thyme and garlic to a roasting pan.

Place lamb on top of the herbs and season well.

Roast in a preheated oven until medium or done to your liking.

Serve with Balsamic green beans (see recipe).
