Ingredients (9)

12 watermelon — thinly sliced
12 slices charcuterie — spanish, chorizo, prosciuto, coppa,salami
micro herbs — to garnish
2 harissa paste
2 fresh chillies — 573
lemon — juice only
1/2 tsp dried mint
salt — just a pinch
dried chilli flakes

Combine all the ingredients for the dressing, whisk well, taste if it needs more acidity and add another squeeze of lemon juice and set aside.
Arrange the watermelon and charcuterie on a platter on individual small plates.
Garnish with the micro herbs, drizzle with the dressing and serve.
