Versatile breakfast strata

Ingredients (16)

500 ml bread — chunks
3 eggs
250 ml milk
10 ml mustard — powder
5 ml paprika
2,5 ml nutmeg — ground
1 ml dried chilli flakes
salt and freshly ground black pepper
375 ml grated cheese such as mozzarella, cheddar or blue cheese
3 spring onion — chopped
1 red pepper — diced
125 g mushrooms — sliced
125 ml chopped ham or chorizo slices
big handful of chopped fresh parsley or coriander
roasted baby tomatoes or braised tomato sauce

Preheat the oven to 180°C.

1 Arrange the bread on a baking sheet and bake for about 10 minutes until slightly dried out.

Transfer to a greased ovenproof dish.

2 Whisk the eggs, milk, mustard, spices, salt and
pepper. Add half the
cheese and pour over
the bread.


Heat the oil
and fry the onions, red
pepper and mushrooms
until softened.

Add the
ham or chorizo and stir fry a little. Allow to cool.

4 Spoon into the dish and
sprinkle the parsley or
coriander and remaining
cheese over.

Cover and
allow to stand for at
least an hour or overnight.

5 Bake for 30-40 minutes
or until done and puffed

Remove from the
oven and allow to stand
for 10 minutes.


Serve with
the roasted tomatoes
or tomato sauce.
