Ingredients (12)

25 g butter
25 g flour
500 ml milk
salt and white pepper
80 g cheddar cheese — grated
300 g pasta — macaroni
200 g bacon — cut into pieces
1 red onion — chopped
2,5 ml each chilli spice, cumin, paprika — separate entries
500 ml chicken — cooked, shredded
400 g creamed sweetcorn — can
fresh parsley — chopped

Method:

Preheat oven to 200 degrees celsius. Grease
a 23 × 18 cm baking dish.

CHEESE SAUCE

Melt the
butter in a saucepan. Stir in the
flour and cook for 1 minute.
Take the pan off the heat and
gradually stir in the milk to get a
smooth sauce. Return to the heat
and bring to the boil, stirring all
the time.

Simmer gently for 8 minutes
and season with salt and white
pepper. Stir in the cheese and
let it melt.

MACARONI

Cook pasta
until al dente in generously
salted water according to
package directions. Drain and
set aside.

Heat the oil in a large pan
over a medium-high heat. Sauté
bacon and onion for 5 minutes
or until slightly golden. Add the
spices, chicken and sweetcorn;
simmer until everything is
heated through.

Stir the pasta and cheese
sauce into the chicken mixture
and transfer it to the prepared
baking pan. Bake for about
10 minutes and serve sprinkled
with parsley.
