Salmon, peas and sweet potato mash

Ingredients (5)

1 sweet potato
coconut milk — for consistency
1/2 cup frozen peas
100 g salmon fillets
olive oil — for frying

Method:

Peel and chop the sweet potato into 1-inch chunks  

Add to a pot of boiling water and boil for 15 minutes or until soft  

Add the frozen peas to a pot of boiling water and boil for 10 minutes until fully cooked  

Season the salmon with a dash of olive oil  

Heat oil in a pan on a medium to high heat, add the salmon skin side down and fry on each side for 4 minutes each side  

Remove the salmon from the heat and flake  

Mash the cooked sweet potato with the coconut milk  

Add the peas and salmon to the sweet potato and combine
