Porridge with bacon and honey

Mealie porridge is a staple in many South African homes. We’ve spruced it up with crispy fried bacon and honey.

Ingredients (9)

15 ml oil
200 g bacon — rashers
250 ml water
125 ml milk
salt — just a pinch
250 ml maize meal
125 ml mature cheddar cheese — grated
honey
fresh basil

Method:

1 Preheat the oil in a pan and fry the bacon rashers until crispy.

Set aside half the bacon and roughly chop the other half.

2 In a saucepan, bring the water, milk and salt to the boil.

Add the mealie meal and beat well with a wire whisk until the mixture is smooth.

Simmer over medium heat for 10-15 minutes or until the porridge is thick and cooked but not firm.

Stir continually to prevent lumps.

3 Add the cheese,chopped bacon and the honey, stir and divide between four porridge bowls.

4 TO SERVE

Drizzle more honey over, top with the rest of the bacon and garnish with fresh basil.

Serve immediately.
