Pork chops with red wine grape sauce

Ingredients (12)

4-6 pork — chops
5 ml dried thyme
salt and freshly ground black pepper
15 ml butter
15 ml butter
250 g seedless red or black grapes
15 ml vinegar — balsamic
125 ml wine — red
60 ml sugar
5 ml cornflour
15 ml water
freshly ground black pepper

Method:

Chops

1. Season the chops
with the thyme, salt and
pepper.

2. Heat the oil in a pan and
fry the chops in batches
until browned. Add the
butter and continue frying until done – 10-15 minutes, depending on the
thickness of the chops.

Sauce

3. Heat the butter in
a small saucepan and fry
the grapes for a minute.
Add the vinegar, red wine
and sugar and stir until
the sugar has dissolved.
Simmer slowly for 10
minutes.

4. Mix the cornflour and the
water to a paste. Add to
the sauce and stir continuously until the sauce
thickens. Season with
pepper.

5. Serve the chops with the
sauce.
