Peanut butter and cornflakes cookies

It is time to fill the cookie jars with this flavourful peanut butter and cornflakes cookie recipe.

Ingredients (12)

4 cup cornflakes
2 cup oats
4 cup sugar
4 eggs
4 tsp Robertson's baking powder
2 tsp vanilla — extract
4 cup coconut — shredded
4 cup flour — cake
4 heaping Tbs peanut butter
500 g butter
4 tsp Robertson's bicarbonate of soda
2 ml salt

Method:

Pre-heat oven to 180ºC.

Cream butter and sugar in the mixer and add the eggs. Mix well.

Then, add the peanut butter and mix well.

Mix the bicarb with a little milk and mix. 

Add all the other ingredients and mix well.

Allow to rest, overnight if possible. Roll in little balls the size of a walnut and place on a greased baking sheet and allow enough space between each cookie for spreading.

Bake for 10-12 minutes and let cool.
