Peanut butter and cornflakes cookies
|4 tsp||Robertson's baking powder|
|2 tsp||vanilla — extract|
|4 cup||coconut — shredded|
|4 cup||flour — cake|
|4 heaping Tbs||peanut butter|
|4 tsp||Robertson's bicarbonate of soda|
Pre-heat oven to 180ºC.
Cream butter and sugar in the mixer and add the eggs. Mix well.
Then, add the peanut butter and mix well.
Mix the bicarb with a little milk and mix.
Add all the other ingredients and mix well.
Allow to rest, overnight if possible. Roll in little balls the size of a walnut and place on a greased baking sheet and allow enough space between each cookie for spreading.
Bake for 10-12 minutes and let cool.
