Ingredients (6)

500 g cassava — fresh, peeled and cubed
10 ml garlic — cloves, crushed
60 g butter
250 ml cream
nutmeg — grated
salt and freshly ground black pepper — to taste

Method:

Place cassava in a saucepan and cover with
salted water.

Cover and simmer until soft cooked – about 30
minutes.

Remove the cassava from the heat and drain
off the water, add garlic, butter and cream.

Mash with a potato masher until smooth, for
a smoother mash rub through a sieve.

Season with nutmeg, salt and pepper.

Serve warm, drizzled with a bit of olive
oil.

Move! tip: Cassava is also known as manioc
and yuca, it is a tropical root plant and can be cooked and served like
potatoes.

Cassava carbohydrates are high while its
glycemic index is low
