Creamy garlic potato mash with chilli minced beef
|salt and freshly ground black pepper|
|400 g||beef mince|
|1/2||onion — chopped|
|2 tbsp||tomato paste|
|1 tbsp||sweet chilli sauce|
|1 tbsp||garlic flakes|
|1 tbsp||curry powder|
|1 tsp||dried oregano|
|50 ml||olive oil|
For the mash:
Place the potatoes in a large pot. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil.
Cook until potatoes are soft. Peel off the potato skin and keep aside in a pot.
In a pan, fry the garlic cloves (unchopped) until they are soft. Add the garlic to the potatoes.
Add cream and butter. Season with salt and pepper then start mashing until the potatoes are creamy and thick.
For the mince:
Heat olive oil and sauté onion, garlic and peppers for 5-10min. Add the minced beef and stir.
Add all the spices then stir in the tomato paste and sweet chilli. Add 100ml of water and let it simmer for 5min.
Serve it with creamy garlic mash potatoes and garnish with fresh parsley.
