Chicken wraps and Tzatziki

Ingredients (16)

4 chicken breast fillets
15 ml Cajun spice
5 ml dried mixed herbs
45 ml oil
4 pita breads
1 red pepper — deseeded and cut into thin strips
red onion — thinly sliced
lettuce
feta cheese
english cucumber — finely diced
250 ml yoghurt — natural
20 ml garlic — cloves, minced
45 ml fresh dill — chopped
lemon — juiced
salt and freshly ground black pepper
freshly ground black pepper — to tatse

Method:

Pound chicken breasts lightly to flatten.

Season with Cajun spice and herbs.

Heat oil in a frying pan and fry chicken over medium heat for 5-6
minutes on each side.

Cut into strips.

For the tsatziki:

Mix all ingredients together in a bowl.

Cover and chill until ready to serve.

If desired, puree the ingredients in a blender for a smooth sauce.

To serve:

Lay pitas on a clean surface. Arrange lettuce, chicken strips, red
pepper strips and onions on the pitas.

Top with tzatziki sauce and crumbled feta.

Fold pita over like a sandwich, using a string to keep it together.

A pita is a Greekstyle flat-bread you can find at almost any supermarket.
