5.00 ml lemon — peeled and grated
30.00 ml lemon juice — freshly squeezed
1.00 garlic — cloves, crushed
5.00 ml vinegar — white wine
1.00 eggs
salt and freshly ground black pepper
125.00 ml fresh chillies — 573

Method:

Whisk all ingredients, except oil, together well. Add oil slowly, whisking constantly, until mixture is smooth and creamy.
Makes 170 ml (2/3 cup).
