Ingredients (9)

8 tbsp butter
100 g sugar — or stevia
2 free range eggs — beaten
3 bananas — mashed
1/2 tsp salt
1 tsp bicarbonate of soda
170 g gluten-free flour
1 1/2 tbsp xanthan gum
30 g walnuts — chopped

Method:

Preheat the oven to 160°C fan/180°C/350°F/gas mark 4.

Cream together the butter and sugar.

Stir in the beaten egg and banana.

Slowly mix in the salt, bicarbonate of soda, flour and xanthan gum powder.

Fold in the walnuts, if using.

Pour into a greased loaf pan and bake for 40–50 minutes.

A delicious family teatime treat. Gluten, nut-free (if you omit the walnuts) and can be dairy-free if you replace the butter with coconut fat (oil). This recipe could also be converted to egg-free with an egg replacer.
