Ingredients (13)

50 g butter
2 sprig leeks
200 g mushrooms
3 potatoes
300 g haddock
420 g sweetcorn — creamed
1 eggs
250 ml milk
175 g cottage cheese — smooth
2 ml salt
2 ml freshly ground black pepper
100 ml flour — self-raising
250 ml cheddar cheese

Method:

Sauté leeks, mushrooms and potatoes in the butter.
Remove from stove and add cooked and flaked haddock and the sweetcorn.
Whisk egg, milk & cottage cheese together.
Stir into mixture.
Add flour, season to taste and mix well.
Spoon into 20×20 cm dish.
Sprinkle grated cheese on top.
Bake at 180°C for 50-55 minutes.

Variation:
Omit haddock and add 250g crispy fried bacon or smoked snoek.
