Green Thai Chicken



 
 

Ingredients

 
  • 1
    onion sliced
  • 30
    g
    butter
  • 4
    filetted chicken breasts sliced
  • 2
    tbsp
    fresh chopped coriander
  • 1
    tsp
    fresh chopped chilli
  • 1
    tbsp
    fresh grated ginger
  • 1
    can
    coconut cream
  • 1
    fresh sliced mango
  • rice
  • avocado
Servings: Change Serving
 
 

Method

 
Saute onion in butter until translucent. Add chicken and stirfry. Stir in coriander, chilli and ginger. Stir for 2 minutes. Add coconut cream. Bring to the boil and simmer for 5 minutes. Add mango and cook 1 minute. Serve on rice with avocado.
